These are all rough estimates! I tried not to leave anything general, just stating ’late thirties’ or ‘early twenties,’ and instead made guesses at their exact ages.
Dogmeat, 5 - German Shepherd’s usually live to around 9-13, but mature within about a year, and he’s at what we can assume is peak performance. The earliest we know he’s been around is in Kellogg’s memories, but that was just a few years ago. X6-88, 10 - He was created as an adult, so he could’ve been ‘born’ at any time. MacCready, 22 - He was 12 during Fallout 3, 10 years ago. Piper, 23 - We can estimate Nat to be around 13, and Piper’s probably no more than 10 years older than her. Cait, 25 - Wiki says 27, but all we know is that she started working at the Combat Zone at around 21, and you meet her a few years after that. Preston, 27 - Joined the Minutemen at 17, but we don’t know how long he was around before he was called to Quincy. 
He can’t be found by the player in Fallout 3, so he’d already left by that point. He’s old enough to be a high-ranking officer, and he ran a junk stand in Rivet City.
Paladin Danse, 30 - We’re thinking how old Danse’s mind is, not the synth body. If Desdemona is right in her suspicion that he’s John D, a member at least 20 years old who survived a raid on the Railroad in 2266 (20 years ago,) he’s at least 40. 
Deacon, 40 - The earliest we know he was around was 2273, but we know he’s older than 14. Hancock, 40 - Ghoul faces don’t show age well, but he’s McDonough’s brother, so we can estimate based on how old he appears. Plus a shot-in-the-dark guess that he was mutated at about 20 years old. Strong, 80 - The super mutants found in the wasteland are created by the Institute the program started by at least 2224 and ended around 2286. 
Nick Valentine, 250 - The pre-war OG Valentine was probably around 40. Codsworth, 211 - He was bought soon before Shaun was born. Curie, 220 - She was created ten years before the war. I did my best to estimate the rest, and referenced this reddit page as well. Of all the Fallout 4 companions, only MacCready has a cannon age.
